Almond Butter & Jam Roll Muffins

Ingredients
  

For the Dough:

  • ¾ cup warm milk regular or almond milk
  • 2 ¼ tsp instant yeast
  • 1 tbsp granulated sugar
  • cup unsalted butter melted
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • ½ cup granulated sugar
  • 3 ½ – 3 ¾ cups all-purpose flour
  • 6 tbsp heavy whipping cream poured on top before baking

For the Filling:

  • ½ cup almond butter or peanut butter
  • ½ cup strawberry jam or any jam of choice

For the Frosting:

  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 4 tbsp unsalted butter melted
  • 2 tbsp cream cheese optional, for extra creaminess

Instructions
 

Activate the Yeast

  • In a small bowl, mix the warm milk, yeast, and 1 tbsp of sugar. Stir and let it sit for 10 minutes until frothy. If the mixture doesn’t foam, the yeast hasn’t activated, and you’ll need to start over.

Prepare the Dough

  • Preheat your oven to 170°F (or set to the warm setting) and then turn it off.
  • In a stand mixer bowl, add 3 ½ cups of flour, melted butter, vanilla extract, and sugar. Mix on low speed.
  • Slowly pour in the milk mixture while mixing.
  • Add in the eggs one at a time, ensuring they’re fully incorporated.
  • Increase to medium speed (speed 4) and knead for 5–7 minutes until the dough is smooth and slightly elastic. If kneading by hand, flour your surface and knead for 6–8 minutes, using up to ¼ cup more flour if needed.
  • Form the dough into a ball, place it in a greased bowl, cover, and let it rise in a warm spot for 1–1.5 hours until doubled in size.

Shape the Muffins

  • Lightly flour a surface and roll out the dough into a 16×14-inch rectangle.
  • Spread almond butter evenly across the dough, then layer the jam on top.
  • Roll the dough tightly into a log.
  • Using a sharp knife, slice the log into 12 equal rolls.
  • Place each roll into a greased muffin tin.
  • Cover and let them rise for another 30 minutes.

Bake the Muffins

  • Preheat oven to 350°F.
  • Pour ½ tbsp of heavy whipping cream over each muffin before baking.
  • Bake for 25–30 minutes or until golden brown.
  • Remove from oven and let cool for 5–10 minutes before frosting.

Make the Frosting & Serve

  • Mix powdered sugar, melted butter, vanilla extract, and optional cream cheese until smooth.
  • Spread the frosting over the warm muffins.
  • Sprinkle with chopped nuts or extra jam swirls for added flair.
  • Serve and enjoy!
