Add the Rice & Broth: Stir in the rice, making sure it’s well coated with the seasoning and sofrito. Pour in the seafood broth and bring to a boil. Reduce the heat, cover, and simmer for 15-18 minutes, stirring occasionally.
Incorporate the Mussels: In the last 5 minutes of cooking, gently place the precooked mussels into the pan, covering again to allow them to warm through.
Final Touches: Garnish with chopped cilantro and adjust seasoning if needed. Let the dish rest for a couple of minutes before serving.
