Ingredients
  

  • 1 1/2 cups white rice medium or short grain for a creamy texture
  • 3 cups seafood broth for richer flavor
  • 16 oz seafood mix shrimp, calamari, scallops, etc.
  • 3 tbsp Loisa sofrito or homemade sofrito
  • 3 tbsp diced onion
  • 1 tbsp minced garlic
  • Handful of chopped cilantro
  • 2 tsp Loisa sazon more to taste
  • 2 tsp Loisa adobo more to taste
  • 1 lb precooked mussels
  • 1/2 cup diced tomatoes for added depth
  • 1/2 cup dry white wine optional, enhances flavor
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika adds warmth and complexity
  • Salt and black pepper to taste

Instructions
 

  • Sauté the Base: In a large pan or Dutch oven, heat 1 tbsp olive oil over medium heat. Add the diced onions and sauté for 2-3 minutes until translucent. Stir in the minced garlic and Loisa sofrito, cooking for another 2 minutes until fragrant.
  • Cook the Seafood: Add the seafood mix and sauté for 4-5 minutes. Season with Loisa sazon, Loisa adobo, smoked paprika, and a pinch of salt and black pepper. Stir in the diced tomatoes for added richness. If using, deglaze the pan with white wine and let it reduce for a minute.
  • Add the Rice & Broth: Stir in the rice, making sure it’s well coated with the seasoning and sofrito. Pour in the seafood broth and bring to a boil. Reduce the heat, cover, and simmer for 15-18 minutes, stirring occasionally.
  • Incorporate the Mussels: In the last 5 minutes of cooking, gently place the precooked mussels into the pan, covering again to allow them to warm through.
  • Final Touches: Garnish with chopped cilantro and adjust seasoning if needed. Let the dish rest for a couple of minutes before serving.
  • Serve & Enjoy: Dish up this flavorful seafood rice while it’s hot and savor every bite!
