Preheat oven to 350°F. Line a 12-cup muffin pan with liners or lightly grease it with nonstick spray.
Prepare the bagels – Cut Hawaiian bagels into small, bite-sized pieces and evenly distribute them into the muffin cups.
Mix the egg filling – In a large mixing bowl, whisk together eggs, milk, shredded cheese, salt, pepper, garlic powder, onion powder, smoked paprika, and any optional vegetables until well combined.
Assemble the bites – Sprinkle bacon bits evenly over the bagel pieces in each muffin cup. Then, pour the egg mixture over the bagel pieces, filling each cup just below the top.
Let it soak – Lightly press down on the bagel pieces to ensure they absorb the egg mixture.
Bake for 22-25 minutes or until the egg bites are set and lightly golden on top.
Cool & Serve – Allow them to cool in the pan for a few minutes before removing. Enjoy immediately or store for later!
