4tbspunsalted buttermelted
1tspvanilla extract
⅓cupmilkregular or almond milk
⅛tspsalt
¼cupraspberriesmashed
Optional: finely grated lemon zest for a hint of brightness
For the Raspberry Frosting:
1cuppowdered sugar
1tbspunsalted buttersoftened
1 ½tbspheavy whipping cream
½tspvanilla extract
2–3 crushed raspberries for color and flavor
Instructions
Step 1: Prepare the Batter
Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
In one bowl, whisk together the flour, baking powder, and salt. In another, whisk the melted butter, sugar (or honey), egg, milk, and vanilla extract until smooth and creamy. Gently fold in the dry mixture until just combined, don’t overmix, as this keeps your raspberry donuts tender.
Finally, stir in the mashed raspberries and optional lemon zest. The batter will have a soft pink hue and smell deliciously fruity.
Step 2: Fill the Donut Pan
Transfer the batter into a piping bag or a ziplock bag with the corner snipped off for easier filling. Pipe the batter evenly into the prepared donut pan, filling each mold about ¾ full.
Step 3: Bake
Bake the raspberry donuts for 10–12 minutes, or until they spring back when lightly touched. The tops should look set and slightly golden. Let the donuts cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely before glazing.
Step 4: Make the Raspberry Frosting
In a medium bowl, whisk together powdered sugar, butter, heavy cream, and vanilla extract until smooth. Add the crushed raspberries and mix well. The frosting will turn a beautiful pink with visible raspberry specks, perfect for presentation. If it’s too thick, add a teaspoon of cream; if too thin, mix in a bit more powdered sugar.
Step 5: Frost and Set
Dip the cooled raspberry donuts into the frosting one by one, swirling slightly for that pretty glazed effect. Allow the frosting to set for 10–15 minutes. You can sprinkle them with dried raspberry bits, coconut flakes, or even edible flowers for an extra touch of charm.
