Ingredients
  

  • 1/4 cup avocado oil
  • 1 cup all-purpose flour
  • 1 scoop vanilla protein powder or 1/3 cup protein powder of choice, vanilla or chocolate for double the chocolate!
  • 1 egg
  • 1 tsp baking powder
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 2 tbsp stevia
  • 1/3 cup buttermilk
  • 3/4 cup dark chocolate chips
  • 1 tsp vinegar
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  • Mix the wet ingredients: In a large bowl, whisk together the egg, honey, avocado oil, vanilla extract, buttermilk, and apple cider vinegar.
  • Combine the dry ingredients: In another bowl, whisk together all-purpose flour, protein powder, baking powder, stevia, and salt.
  • Blend together: Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined.
  • Fold in chocolate chips: Gently fold in 3/4 cup of chocolate chips, reserving a few for topping.
  • Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the reserved chocolate chips on top.
  • Bake: Place in the oven and bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool and enjoy! Allow muffins to cool for a few minutes before transferring to a wire rack. Enjoy warm or store for later!
