- 1/4 cup avocado oil
- 1 cup all-purpose flour
- 1 scoop vanilla protein powder or 1/3 cup protein powder of choice, vanilla or chocolate for double the chocolate!
- 1 egg
- 1 tsp baking powder
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 tbsp stevia
- 1/3 cup buttermilk
- 3/4 cup dark chocolate chips
- 1 tsp vinegar
- 1/4 tsp salt
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
Mix the wet ingredients: In a large bowl, whisk together the egg, honey, avocado oil, vanilla extract, buttermilk, and apple cider vinegar.
Combine the dry ingredients: In another bowl, whisk together all-purpose flour, protein powder, baking powder, stevia, and salt.
Blend together: Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined.
Fold in chocolate chips: Gently fold in 3/4 cup of chocolate chips, reserving a few for topping.
Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the reserved chocolate chips on top.
Bake: Place in the oven and bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean.
Cool and enjoy! Allow muffins to cool for a few minutes before transferring to a wire rack. Enjoy warm or store for later!
