Best Pumpkin Spice Protein Cookies for Fall
These soft and chewy pumpkin protein cookies are made with real pumpkin, cozy spices, and a boost of vanilla protein powder. Easy to make, full of fall flavor, and the perfect healthy treat. Makes about 12 cookies depending on the scoop size.
1/2 cup softened butter 1/3 cup sugar 1/3 cup light brown sugar 1 egg yolk 2 tbsp pumpkin puree 1 tsp pumpkin spice 1/2 tsp cinnamon 1 cup all-purpose flour 1 scoop vanilla protein powder I used Levels Protein 1/2 tsp baking soda Snickerdoodle Topping: 1/3 cup sugar 1 tsp cinnamon
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream the butter, sugar, and light brown sugar until light and fluffy.
Add the egg yolk, pumpkin puree, pumpkin spice, and cinnamon. Mix until smooth and well combined.
Whisk together the dry ingredients – flour, protein powder, and baking soda – then gradually add them to the wet mixture until a dough forms.
In a small bowl, mix together the snickerdoodle topping of sugar and cinnamon.
Scoop the dough into balls (depending on the scoop size, you’ll get about 12 cookies). Roll each ball in the cinnamon-sugar mixture.
Place on the baking sheet about 2 inches apart and bake for 10–12 minutes.
Remove from the oven when edges are set but centers are still soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
