Ingredients

  • 3 –4 bell peppers any color, sliced in half and seeds removed
  • 1 package 90-second Spanish style rice
  • 1 –1½ cups shredded cheese cheddar, Mexican blend, or mozzarella

Optional protein:

  • Cooked ground beef
  • Ground turkey
  • Shredded chicken
  • Plant-based meat alternative

Instructions

Step 1: Prep the Bell Peppers

  • Preheat your oven to 400°F. Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the peppers cut-side up in a baking dish.

Step 2: Prepare the Rice

  • Heat the 90-second Spanish style rice according to the package directions. This flavorful rice is what makes these rice stuffed peppers quick and easy.

Step 3: Fill the Peppers

  • Spoon the rice evenly into each bell pepper half. If you’re adding meat, mix the cooked protein into the rice before filling the peppers. Rice stuffed peppers are incredibly versatile, so feel free to customize.

Step 4: Add Cheese

  • Top each pepper generously with shredded cheese. The cheese melts beautifully and adds richness to these rice stuffed peppers.

Step 5: Bake

  • Bake uncovered at 400°F for 20–25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
