Chicken Bahn Mi Sandwich
A sandwich filled with a blend of savory meats, pickled vegetables, fresh herbs, and condiments.
For the Chicken:
- 3-4 boneless skinless chicken thighs (cut into strips)
- 1/3 cup soy sauce
- 1-2 tsp fish sauce
- 1 tbsp date syrup
- 2 cloves garlic minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp sesame oil optional, for extra depth of flavor
For the Pickled Vegetables:
- 3 tsp vinegar rice or apple cider
- 1 tsp date sugar
- 1/4 tsp salt
- 1/2 cup julienned carrots
- 1/2 cup thinly sliced cucumber
- 1/2 cup thinly sliced radish optional, for added crunch and spice
To Assemble:
- Fresh cilantro leaves
- Sourdough baguette or French bread
- 2 tbsp mayonnaise
- 1 tsp sriracha or chili paste optional, for heat
- Optional: Sliced jalapeños for extra spice
- Optional: Thinly sliced onions for additional crunch
Prepare the Pickled Vegetables:
In a bowl, combine vinegar, date sugar, and salt. Stir until dissolved.
Add the julienned carrots, sliced cucumber, and radish, tossing to coat.
Cover and refrigerate for at least 1 hour to enhance the flavors. The longer they sit, the better they taste!
Marinate and Cook the Chicken:
In a bowl, mix soy sauce, fish sauce, date syrup, minced garlic, salt, black pepper, and sesame oil.
Add the chicken strips and let marinate for at least 15-20 minutes, but ideally for 1 hour for maximum flavor.
Heat a pan over medium heat and cook the chicken until fully cooked and slightly caramelized, about 5-7 minutes per side.
Assemble the Sandwich:
Slice the sourdough baguette and spread mayonnaise on both halves.
If you like a bit of spice, mix sriracha or chili paste with the mayo before spreading.
Layer the cooked chicken, followed by pickled vegetables.
Top with fresh cilantro, sliced jalapeños, and onions if desired.
Serve immediately and enjoy!
