Chocolate Carmel Rice Krispy Treats

Ingredients
  

Rice Krispy Layer

  • ¼ cup unsalted butter
  • 6 cups mini marshmallows
  • 6 cups Rice Krispies cereal
  • 1 tsp vanilla extract for enhanced flavor
  • ¼ tsp sea salt balances the sweetness

Caramel Layer

  • 1 bag 11 oz soft caramels, unwrapped
  • 3 tbsp heavy cream for extra smoothness
  • ½ tsp sea salt optional, for salted caramel flavor
  • ½ tsp vanilla extract adds depth to the caramel flavor

Chocolate Layer

  • 1 bag 12 oz chocolate chips (milk, dark, or semi-sweet)
  • 1 tbsp coconut oil or unsalted butter for a glossy, smooth finish
  • Flaky sea salt optional, for garnish
  • ½ cup chopped nuts optional, for added crunch

Instructions
 

Prepare the Rice Krispy Base

  • In a large microwave-safe bowl, melt the butter and marshmallows together for about 2 minutes, stirring every 30 seconds until smooth. (Alternatively, melt over low heat on the stovetop, stirring continuously.)
  • Stir in the vanilla extract and sea salt.
  • Add the Rice Krispies cereal and mix until well combined.
  • Grease a 9×13-inch baking pan with butter or coconut oil and evenly press the mixture into the pan. Set aside.

Make the Caramel Layer

  • In a microwave-safe bowl, combine the unwrapped caramels and heavy cream.
  • Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
  • Stir in sea salt and vanilla extract (if using), then pour over the Rice Krispy layer, spreading evenly.
  • Let it set for 5-10 minutes to firm up slightly.

Add the Chocolate Layer

  • In another microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring in between, until smooth.
  • Pour the melted chocolate over the caramel layer and spread evenly.
  • Optional: Sprinkle flaky sea salt and chopped nuts on top for a gourmet finish.
  • Allow the chocolate to harden at room temperature or place in the refrigerator for about 20-25 minutes.

Slice & Serve

  • Once fully set, cut into squares or bars and enjoy!
  • Store leftovers in an airtight container at room temperature for up to 5 days or in the refrigerator for a firmer texture.
  • These treats can also be frozen for up to 2 months – simply thaw at room temperature before serving.

Notes

Extra Tips for the Best Rice Krispy Treats

  • Use Fresh Marshmallows – Older marshmallows may not melt as smoothly, affecting the texture.
  • Press Lightly – Avoid pressing the Rice Krispy mixture too firmly into the pan to keep them light and chewy.
  • Try Different Toppings – Sprinkle crushed pretzels, toffee bits, or even drizzled white chocolate on top for extra variety.
  • Cut Cleanly – To prevent the chocolate from cracking when slicing, use a sharp knife warmed under hot water.
