Instructions
Step 1: Make the Pie Crust
In a large bowl, mix the flour, sugar, and salt.
Using a box grater (large grate side), grate the cold butter into the flour mixture. If you don’t have a grater, cut the butter into thin slices.
Use your hands to mix until the butter forms pea-sized crumbles.
Gradually add cold water, a tablespoon at a time, mixing until the dough holds together. You may need the full 1/2 cup, depending on humidity.
Divide the dough into two flat discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
Step 2: Prepare the Apple Filling
While the pie crust chills, peel and slice your apples. Place them in a large bowl.
In a pot over medium-high heat, melt the butter, then stir in the flour, cornstarch, sugars, and spices.
Cook until the mixture thickens into a syrup (about 2-3 minutes).
Pour the syrup over the sliced apples and toss to coat evenly. Set aside.
Step 3: Assemble the Pie
Preheat your oven to 375°F (190°C).
Roll out one of the chilled dough discs on a floured surface until large enough to fit your pie dish.
Gently place the crust into the dish and press down lightly.
Pour in the apple mixture.
Roll out the second dough disc for the top crust. You can create a lattice design or simply place the crust on top, cutting slits to allow steam to escape.
Seal the edges by pressing with a fork or crimping with your fingers.
Brush the top crust with an egg wash and sprinkle with sugar.
Step 4: Bake and Serve
Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbling.
Allow the pie to cool slightly before slicing.
Serve warm with a scoop of vanilla ice cream!
