Ingredients

  • 1 cup canned coconut milk full-fat for maximum creaminess
  • 3 tablespoons honey maple syrup, or stevia to taste
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon unsweetened coconut flakes
  • 1/4 cup chia seeds
  • 1 ripe mango peeled and diced (save a few cubes for topping)
  • Pinch of salt
  • Optional toppings: toasted coconut granola, chopped mint, lime zest

Instructions

Step 1: Mix the Coconut Base

  • In a mixing bowl or large jar, whisk together the coconut milk, sweetener of your choice, vanilla extract, unsweetened coconut flakes, and a pinch of salt. Make sure the coconut flakes are evenly dispersed for texture in every bite.

Step 2: Stir in the Chia Seeds

  • Add the chia seeds and stir thoroughly to combine. Let the mixture sit for 5 minutes, then give it another stir to break up any clumps. This ensures your coconut mango chia pudding has an even, smooth texture throughout.

Step 3: Chill the Mixture

  • Cover the bowl or jar and place it in the refrigerator for at least 2 hours, or overnight for best results. As it chills, the chia seeds will absorb the liquid and thicken into a pudding-like consistency.

Step 4: Prepare the Mango

  • While the pudding chills, take half of your diced mango and puree it in a blender or food processor. This creates a vibrant, sweet mango layer or swirl to complement the creamy chia pudding. The other half of the diced mango will be used as a fresh topping.

Step 5: Assemble the Pudding

  • Spoon the thickened chia pudding into two jars or glasses. Add a generous swirl or layer of mango puree. Top with the remaining diced mango, toasted coconut flakes, and any other desired toppings like granola or mint.

Step 6: Enjoy the Tropical Vibes

  • Serve your coconut mango chia pudding cold and enjoy the creamy, fruity goodness in every spoonful. It’s light, filling, and absolutely delicious.
