Ingredients
  

  • 1 cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • ¼ cup heavy whipping cream
  • 1 ½ tsp vanilla extract
  • 3 tbsp crushed cookies and cream cookies or sugar-free alternative
  • 2 tbsp monk fruit sweetener adjust to taste
  • ½ cup white chocolate melted
  • 1 tbsp coconut oil optional, to thin out the chocolate for easier coating
  • Optional: extra crushed cookies for garnish

Instructions
 

  • In a mixing bowl, combine Greek yogurt, vanilla protein powder, heavy cream, vanilla extract, and monk fruit sweetener. Stir until smooth and well combined.
  • Fold in the crushed cookies and cream cookies, ensuring even distribution throughout the mixture.
  • Scoop the mixture into silicone molds or popsicle molds, smoothing out the tops.
  • Freeze for at least 6 hours or until completely solid.
  • Melt the white chocolate in a microwave-safe bowl, stirring in intervals to prevent burning. If using, stir in the coconut oil to create a smoother chocolate coating.
  • Carefully remove the frozen bars from the molds.
  • Dip the frozen bars into the melted white chocolate or drizzle it over the top for a decorative effect.
  • Sprinkle with additional crushed cookies if desired for extra crunch and flavor.
  • Allow the chocolate to set at room temperature or place the bars back in the freezer for a few minutes.
  • Serve immediately and enjoy your protein-packed, creamy ice cream bars!
