Ingredients
  

Meat

  • 2 lbs ground beef
  • 1 ½ tsp salt
  • Ground pepper to taste
  • ½ tsp garlic powder
  • ½ tsp adobo seasoning

Chili Base

  • 2 cans black beans kidney beans, or a mix of both
  • 2 tbsp minced garlic
  • ¼ onion chopped and diced
  • ½ cup tomato sauce
  • 2 tomatoes diced
  • 3 cups water
  • 2 tbsp smooth peanut butter
  • ¼ tsp cumin
  • ½ tsp oregano
  • 1 tsp campfire grilling dust or similar seasoning
  • Ground pepper to taste
  • 2 ½ tbsp chili powder
  • ¼ tsp cayenne pepper or to taste
  • ½ tsp paprika
  • Salt to taste

Instructions
 

  • Heat your Dutch oven over medium heat. Add the ground beef, salt, pepper, garlic powder, and adobo. Cook until fully browned and no longer pink. Remove the beef from the Dutch oven and set aside.
  • In the same Dutch oven, add the minced garlic and diced onion. Cook until softened and fragrant, scraping up any browned bits from the bottom for extra flavor.
  • Add the beans, chili powder, cumin, oregano, paprika, cayenne, grilling dust, and ground pepper. Stir and cook for a few minutes to bloom the spices.
  • Return the cooked ground beef to the Dutch oven and mix well so everything is evenly combined.
  • Add the tomato sauce, diced tomatoes, and water. Stir thoroughly to bring everything together.
  • Add the smooth peanut butter and stir until fully incorporated into the chili.
  • Let the chili recipe dutch oven simmer uncovered until thickened, stirring occasionally to prevent sticking. Taste and adjust salt as needed.
