Ingredients
  

  • 4 large eggs
  • 3 tbsp milk
  • ¼ cup shredded cheese
  • 2 tbsp sun-dried tomatoes chopped
  • 2 tbsp green onions chopped
  • Pinch of salt & black pepper

Instructions
 

  • Preheat oven to 350°F (175°C) and grease 6 muffin cups.
  • In a bowl, whisk together eggs, milk, salt, and pepper.
  • Stir in cheese, sun-dried tomatoes, and green onions.
  • Divide mixture evenly into muffin cups (about ¾ full).
  • Bake 18–20 minutes, until set in the center.
  • Cool slightly before serving, or store for meal prep.
