Easy Sugar Free Blueberry Jam

This sugar free blueberry jam is naturally sweetened with monk fruit and thickened with chia seeds for a healthy, low-carb spread. Perfect for toast, yogurt, pancakes, and desserts ready in under 20 minutes!

Ingredients
  

  • 1 ½ cups frozen or fresh blueberries
  • ¼ cup monk fruit sweetener
  • 1 tablespoon chia seeds
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

Instructions
 

  • Cook the Blueberries – In a small saucepan over medium heat, add the blueberries. Stir occasionally and cook until they begin to release their juices, about 5–7 minutes.
  • Mash & Sweeten – Use a fork or potato masher to lightly mash the blueberries to your desired consistency. Stir in the monk fruit sweetener and continue cooking for another 2–3 minutes.
  • Add Flavor – Stir in the lemon juice and vanilla extract to brighten and enhance the blueberry flavor.
  • Thicken with Chia Seeds – Sprinkle in the chia seeds and stir well. Let the mixture simmer for 3–4 minutes until it begins to thicken.
  • Cool & Store – Remove from heat and allow the jam to cool completely. As it cools, the chia seeds will continue to thicken the mixture. Transfer to a clean jar and refrigerate.
