Celebrate Independence Day with the best 4th of July cake! This patriotic red, white, and blue cake is soft, festive, and perfect for your July 4th dessert table.
Preheat your oven to 350°F (175°C). Line three 8-inch round cake pans with parchment paper circles and grease the sides with butter or nonstick spray to prevent sticking.
Step 2: Mix the Batter
In one large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a second bowl, whisk the buttermilk, oil, eggs, egg white, and vanilla extract until smooth.
Combine the wet and dry ingredients, mixing gently until fully incorporated. Do not overmix.
Step 3: Add Your Patriotic Colors
Evenly divide the batter into three bowls.
Color one bowl red and another navy blue using gel food coloring. Leave the third bowl plain for your white layer. Mix gently to blend in the color.
Step 4: Bake the Cake Layers
Pour each color into its own prepared cake pan. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Allow cakes to cool for 10 minutes in the pans, then transfer to a wire rack and let them cool completely before frosting.
Step 5: Make the Frosting
Beat the butter in a stand mixer or with a hand mixer for 2–3 minutes until creamy and pale.
Gradually add the powdered sugar, one cup at a time. Add the vanilla and heavy cream and continue beating on high for 5–8 minutes until fluffy and smooth.
Step 6: Assemble & Decorate
Trim the tops of the cake layers if needed to level. Stack the red layer first, followed by white, then blue—spreading a layer of buttercream between each.
Frost the outside and top with a thin crumb coat, then chill for 15 minutes. Finish with a thick layer of buttercream and decorate as desired.
