Halloween Cookie Bars

Ingredients
  

For the Cookie Bars

  • 3 cups all-purpose flour plus extra for dusting
  • 1 large egg room temperature
  • 1 ¼ teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 1 ¼ cups granulated sugar
  • 1 teaspoon milk
  • 1 cup unsalted butter room temperature
  • Pinch of salt

For the Chocolate Frosting

  • 2 cups powdered sugar
  • 5 tablespoons heavy whipping cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder
  • 2 tablespoons unsalted butter melted

Instructions
 

Prepare the Dough

  • Take the butter out an hour before baking to soften.
  • Preheat your oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  • In a stand mixer, cream the butter and sugar together on medium speed for about 2 minutes until light and fluffy. Scrape down the sides of the bowl.
  • Lower the speed and mix in the milk, vanilla extract, and egg. Scrape down the bowl again.
  • Add the baking powder, then gradually mix in the flour, one cup at a time, until a dough forms.

Bake the Bars

  • Press the dough evenly into the prepared baking pan.
  • Bake for 25-30 minutes, or until the edges are golden brown.
  • Let the bars cool completely before adding frosting.

Make the Frosting

  • In a stand mixer, whisk together the melted butter, cocoa powder, powdered sugar, heavy cream, and vanilla extract until smooth and fluffy.

Decorate & Serve

  • Spread the chocolate frosting over the cooled cookie bars.
  • Sprinkle with fun Halloween-themed toppings like sprinkles, crushed candy, or edible googly eyes.
  • Cut into 9-12 squares and enjoy!
