Halloween Cookie Bars
These Halloween cookie bars are delicious squares topped with a chocolate frosting and your next spooky scare!
For the Cookie Bars
- 3 cups all-purpose flour plus extra for dusting
- 1 large egg room temperature
- 1 ¼ teaspoons baking powder
- 2 teaspoons vanilla extract
- 1 ¼ cups granulated sugar
- 1 teaspoon milk
- 1 cup unsalted butter room temperature
- Pinch of salt
For the Chocolate Frosting
- 2 cups powdered sugar
- 5 tablespoons heavy whipping cream
- 1 teaspoon vanilla extract
- 2 tablespoons cocoa powder
- 2 tablespoons unsalted butter melted
Prepare the Dough
Take the butter out an hour before baking to soften.
Preheat your oven to 350°F and line an 8×8-inch baking pan with parchment paper.
In a stand mixer, cream the butter and sugar together on medium speed for about 2 minutes until light and fluffy. Scrape down the sides of the bowl.
Lower the speed and mix in the milk, vanilla extract, and egg. Scrape down the bowl again.
Add the baking powder, then gradually mix in the flour, one cup at a time, until a dough forms.
Bake the Bars
Press the dough evenly into the prepared baking pan.
Bake for 25-30 minutes, or until the edges are golden brown.
Let the bars cool completely before adding frosting.
Make the Frosting
In a stand mixer, whisk together the melted butter, cocoa powder, powdered sugar, heavy cream, and vanilla extract until smooth and fluffy.
Decorate & Serve
Spread the chocolate frosting over the cooled cookie bars.
Sprinkle with fun Halloween-themed toppings like sprinkles, crushed candy, or edible googly eyes.
Cut into 9-12 squares and enjoy!
