½Bunch Cilantroor culantro for a more traditional taste
1Large Green Bell Pepperor a mix of green and red for more depth
2TbspAvocado or Olive Oil
Optional Additions: 1 Tomatofor slight sweetness, Fresh Parsley, Oregano, Culantro, Lime Juice, 1 Small Hot Pepper (if you prefer heat)
Instructions
Roughly chop the onions, garlic, cilantro, and any additional herbs you’re using.
Remove the seeds from the bell peppers and chop them into chunks.
Place everything into a food processor.
Pour in the oil and pulse until finely chopped but still slightly chunky. Avoid blending into a puree to maintain texture.
Store in a glass jar or airtight container in the refrigerator for up to 4 weeks, or freeze in portions for up to 3 months. Consider freezing in ice cube trays for easy portioning.
