Honey Garlic Shrimp

Ingredients
  

For the Shrimp & Marinade:

  • 1 lb 450g large shrimp, peeled and deveined
  • 2 tbsp honey
  • 3 tbsp soy sauce low sodium preferred
  • 1 tbsp fresh lemon juice optional for a tangy kick
  • 2 –3 garlic cloves minced
  • 1 tsp ginger grated

For the Stir-Fry:

  • 2 cups broccoli florets
  • 1 tbsp olive oil or sesame oil
  • 1/4 cup water for steaming broccoli
  • 1 tsp cornstarch mixed with 2 tbsp water optional, for thickening sauce
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions
 

Marinate the Shrimp:

  • In a medium bowl, whisk together honey, soy sauce, lemon juice, garlic, and ginger.
  • Add the shrimp, toss to coat, and let it marinate for 15–20 minutes while you prep the broccoli.

Cook the Broccoli:

  • Heat 1 tbsp oil in a large skillet over medium heat.
  • Add the broccoli florets and stir-fry for 2–3 minutes.
  • Pour in 1/4 cup water, cover, and let the broccoli steam for another 2–3 minutes until tender but still crisp.
  • Remove the broccoli from the pan and set aside.

Cook the Shrimp:

  • In the same skillet, add the marinated shrimp (reserve the marinade) and cook over medium-high heat for 1–2 minutes on each side until they turn pink.

Make the Sauce:

  • Pour the reserved marinade into the skillet with the shrimp.
  • If you’d like a thicker sauce, stir in the cornstarch slurry and simmer for 1–2 minutes until the sauce thickens.

Combine & Serve:

  • Return the cooked broccoli to the skillet and toss everything together until well coated in the sauce.
  • Garnish with sesame seeds and green onions.

Enjoy:

  • Serve over steamed rice, quinoa, or noodles for a complete meal.
