For the Shrimp & Marinade:
- 1 lb 450g large shrimp, peeled and deveined
- 2 tbsp honey
- 3 tbsp soy sauce low sodium preferred
- 1 tbsp fresh lemon juice optional for a tangy kick
- 2 –3 garlic cloves minced
- 1 tsp ginger grated
For the Stir-Fry:
- 2 cups broccoli florets
- 1 tbsp olive oil or sesame oil
- 1/4 cup water for steaming broccoli
- 1 tsp cornstarch mixed with 2 tbsp water optional, for thickening sauce
- Sesame seeds for garnish
- Chopped green onions for garnish
Marinate the Shrimp:
In a medium bowl, whisk together honey, soy sauce, lemon juice, garlic, and ginger.
Add the shrimp, toss to coat, and let it marinate for 15–20 minutes while you prep the broccoli.
Cook the Broccoli:
Heat 1 tbsp oil in a large skillet over medium heat.
Add the broccoli florets and stir-fry for 2–3 minutes.
Pour in 1/4 cup water, cover, and let the broccoli steam for another 2–3 minutes until tender but still crisp.
Remove the broccoli from the pan and set aside.
Make the Sauce:
Pour the reserved marinade into the skillet with the shrimp.
If you’d like a thicker sauce, stir in the cornstarch slurry and simmer for 1–2 minutes until the sauce thickens.
