Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper, leaving a slight overhang for easy removal.
Step 2: Combine Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, ginger, nutmeg, and cinnamon.
Step 3: Mix Wet Ingredients
In a large bowl, whisk together the eggs, granulated sugar, brown sugar, oil, Greek yogurt, and vanilla until smooth.
Step 4: Combine & Fold
Gradually mix the dry ingredients into the wet ingredients until just combined. Gently fold in the finely grated carrots.
