Ingredients
  

  • 1 cup oat flour
  • 1 teaspoon baking powder
  • 3 tablespoons Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon vinegar
  • 2 tablespoons maple syrup or honey
  • Additional maple syrup or honey for serving

Instructions
 

Step 1: Mix the Dry Ingredients

  • In a medium bowl, whisk together the oat flour and baking powder until combined.

Step 2: Add the Wet Ingredients

  • Add the Greek yogurt, eggs, vanilla extract, vinegar, and maple syrup or honey.
  • Whisk until a smooth batter forms and no large lumps remain.

Step 3: Let the Batter Rest

  • Allow the batter to sit for 2–3 minutes. This helps the oat flour absorb moisture and results in fluffier oat flour pancakes.

Step 4: Cook the Pancakes

  • Heat a lightly greased nonstick skillet or griddle over medium heat.
  • Pour approximately ¼ cup of batter onto the skillet for each pancake.
  • Cook for 2–3 minutes until bubbles begin forming on the surface and the edges start to set.
  • Carefully flip and cook for an additional 1–2 minutes until golden brown and cooked through.

Step 5: Serve

  • Serve your warm oat flour pancakes with maple syrup, honey, fresh berries, sliced bananas, or a dollop of Greek yogurt.
