Single Serve Double Chocolate Cookie

This large, double chocolate, single serve cookie is the perfect cookie to satisfy that sweet tooth within minutes.

Ingredients
  

  • 2 Tbsp unsalted butter softened (not fully melted)
  • 3 Tbsp brown sugar packed
  • ½ Tbsp unsweetened cocoa powder
  • ¼ Tsp vanilla extract
  • 3 Tbsp all-purpose flour
  • ¼ Tsp baking powder
  • Tsp baking soda
  • 1 Simply Peanut Butter Date Bar chopped
  • 1 Tbsp chopped chocolate chunks for topping

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  • In a small mixing bowl, cream together the softened butter and brown sugar for about 2 minutes until well combined.
  • Stir in the vanilla extract and cocoa powder until fully incorporated.
  • Add the flour, baking soda, and baking powder, mixing until a soft dough forms.
  • Chop the Simply Peanut Butter Date Bar into small pieces and fold them into the dough.
  • Scoop the dough onto the prepared baking sheet and shape it into a ball. Since the dough is slightly sticky, use a spatula to help form it.
  • Top with chocolate chunks and bake for 12 minutes.
  • Remove from the oven. While the cookie is still warm, place a bowl over the cookie and move it in a circular motion to reshape the edges into a perfect circle.
  • Let it cool slightly before enjoying your warm, gooey, double chocolate cookie!
  • For an extra indulgent experience, serve with a cold glass of milk or a scoop of vanilla ice cream.
