Instructions
Step 1: Prep & Mix
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, whisk together the olive or avocado oil, eggs, egg yolk, and vanilla extract until smooth and well combined. Add in the brown sugar and granulated sugar and whisk until creamy and glossy.
In a separate bowl, combine the quick oats, all-purpose flour, ground flaxseeds, baking soda, cinnamon, and salt.
Step 2: Combine Wet & Dry Ingredients
Slowly add the dry ingredients to the wet mixture, stirring just until no dry streaks remain. Do not overmix. Fold in chocolate chips or other mix-ins like chopped nuts or dried fruit.
Step 3: Scoop & Bake
Using a tablespoon or cookie scoop, drop the dough onto the prepared baking sheets, spacing each cookie about 2 inches apart. Lightly press each cookie down with the back of the scoop or your fingers to help them spread.
Bake for 8–9 minutes or until the edges are lightly golden but the centers remain soft. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to finish cooling.
