Ingredients

  • 2 Tbsp unsalted butter melted
  • 3 Tbsp brown sugar
  • 1 egg yolk
  • 1/8 tsp vanilla extract
  • 2 drops red food coloring
  • 3 Tbsp all-purpose flour
  • 1 Tbsp unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 3-4 white chocolate chips plus extra for topping

Instructions

Step 1: Preheat & Prep

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

Step 2: Mix Wet Ingredients

  • In a small bowl, whisk together the melted butter and brown sugar until smooth. Stir in the vanilla extract, egg yolk, and red food coloring.

Step 3: Incorporate Dry Ingredients

  • Add the flour, cocoa powder, and baking powder to the wet mixture. Stir gently until just combined—overmixing can make the cookie tough.

Step 4: Fold in Chocolate Chips

  • Gently mix in the white chocolate chips so they’re evenly spread throughout the dough.

Step 5: Shape & Bake

  • Scoop the dough onto your prepared baking sheet, shaping it into a round mound. Press a few extra white chocolate chips on top for that bakery-style finish.
  • Bake for about 12 minutes, or until the edges are set but the center looks slightly soft.

Step 6: Shape for the Perfect Cookie

  • Once the cookie comes out of the oven, place a bowl over it and gently swirl in a circular motion. This trick creates that perfectly round shape you see in bakery cookies.

Step 7: Cool & Enjoy

  • Let the cookie cool for a few minutes before digging in. Enjoy your warm, gooey single serve red velvet cookie straight from the oven.

Notes

Pro Tips

  • For a gooier center, slightly underbake the cookie by 1-2 minutes.
  • Don’t skip the swirling technique—it makes your cookie look like a bakery-style treat!
  • Add a pinch of salt to enhance the flavors.
