The Ultimate Single-Serve Birthday Cookie

Ingredients
  

Cookie:

  • 2 Tbsp unsalted butter softened (not melted)
  • 2 ½ Tbsp brown sugar packed
  • ½ Tsp birthday cake extract or vanilla extract + almond extract for a similar effect
  • 3 ½ Tbsp all-purpose flour
  • ¼ Tsp baking powder
  • Tsp baking soda
  • 1 ½ Tbsp sprinkles plus more for topping

Icing:

  • 3 Tbsp powdered sugar
  • 1 ½ Tsp milk or water
  • More sprinkles for garnish

Instructions
 

  • Preheat & Prep: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream Butter & Sugar: In a small mixing bowl, cream together the softened butter and brown sugar until light and fluffy (about 2 minutes). Stir in the birthday cake extract.
  • Add Dry Ingredients: Mix in the flour, baking powder, and baking soda until fully combined.
  • Fold in Sprinkles: Gently fold the sprinkles into the dough, distributing them evenly.
  • Shape the Cookie: Scoop the dough onto the prepared baking sheet and form it into a round shape. The dough will be slightly sticky, so use a spatula to help shape it.
  • Bake: Bake for 12 minutes or until the edges are golden brown.
  • Shape & Cool: Once out of the oven, take a small bowl and gently move it in a circular motion around the cookie to shape it into a perfect round. Let it cool before adding the icing.
  • Prepare the Icing: While the cookie cools, whisk together the powdered sugar and milk (or water) until smooth.
  • Decorate: Drizzle the icing over the cooled cookie and top with extra sprinkles for that perfect birthday party look!
