Ingredients
  

  • 1 cup pineapple chunks fresh is best for that bold, juicy flavor
  • 1 cup mango peeled and diced (ripe but firm mango is ideal)
  • 1 cup watermelon cubed (seedless if possible)
  • 1/2 cup kiwi peeled and sliced into half-moons
  • 1/2 cup strawberries hulled and quartered
  • 1/2 cup mandarin orange segments fresh or canned, drained well
  • 1/2 cup grapes halved (choose red, green, or a mix for more color)
  • 1/4 cup shredded coconut optional but adds a delicious tropical flair
  • 1 tablespoon fresh mint finely chopped for a refreshing finish

For the Citrus-Honey Dressing:

  • Juice of 1 lime freshly squeezed
  • Juice of 1/2 orange freshly squeezed
  • 1 tablespoon honey or agave syrup to taste
  • 1/2 teaspoon grated fresh ginger optional for a slight spicy kick

Instructions
 

  • Prepare all your fruits by washing, peeling, and cutting them into bite-sized pieces. Try to keep the pieces uniform in size for the prettiest presentation and easiest eating.
  • In a large bowl, gently toss together the pineapple, mango, watermelon, kiwi, strawberries, mandarin oranges, grapes, and shredded coconut.
  • In a small bowl, whisk together the lime juice, orange juice, honey, and freshly grated ginger (if using) until smooth and well blended.
  • Pour the citrus-honey dressing evenly over the mixed fruits. Using a large spoon or spatula, gently toss everything together so the tropical fruit salad gets coated without bruising the tender fruits.
  • Sprinkle the chopped mint over the top, give the salad one last gentle toss, and cover it. Refrigerate your tropical fruit salad for 15–30 minutes to allow the flavors to meld together beautifully.
  • Serve chilled and enjoy every refreshing, juicy bite of this beautiful tropical fruit salad!
