Ingredients Youโ€™ll Need

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, sliced
  • ยฝ cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • ยฝ teaspoon sea salt

How to Make the Best Caramel Sauce

Step 1: Prep Like a Pro
Before you even turn on the stove, slice your butter and measure the heavy cream. Having everything ready ensures that once the sugar melts and starts bubbling, youโ€™re not scrambling. Timing matters when youโ€™re making the best caramel.

Step 2: Use a Light-Colored Pan
Avoid using dark pans that can hide the sugarโ€™s color changes. A stainless steel or light-bottomed saucepan lets you see when the sugar reaches that perfect deep amber shade, which is key to creating the best caramel flavor.

Step 3: Melt the Sugar
Pour the granulated sugar into your pan and heat it over medium heat. Stir continuously with a wooden spoon or heat-safe spatula. At first, the sugar will clump up, donโ€™t worry, itโ€™s supposed to! Keep going until it melts into a clear liquid and turns golden.

Step 4: Caramelize to Amber Perfection
Continue stirring as the melted sugar transforms into a rich amber color. This stage happens fast, so donโ€™t walk away. The deep color is what gives the best caramel its signature flavor, bold, toasted, and irresistibly smooth.

Step 5: Add the Butter
Carefully drop in the sliced butter and stir. The mixture will bubble aggressively, this is normal. Stir constantly until the butter is completely melted and fully incorporated.

Step 6: Add Cream Gradually
Turn off the heat, but keep the pan on the warm stove. Slowly pour in the heavy cream while stirring the entire time. It will bubble and hiss at first, then come together into a silky sauce.

Step 7: Finish with Vanilla and Salt
Add the vanilla extract and sea salt. Stir until the mixture is smooth and evenly blended. This is when the best caramel really comes together, creamy, luscious, and just the right amount of salty-sweet.

Step 8: Cool and Store
Pour the hot caramel into a heat-safe glass jar and let it cool at room temperature. Once cool, cover and refrigerate for up to two weeks. Warm it gently before using to restore that pourable texture.

Tips for Making the Best Caramel Sauce Every Time

  • Donโ€™t rush the caramelization process. Keep the heat at medium and stir patiently.
  • Use high-quality ingredients. Real butter and heavy cream make a noticeable difference in flavor and consistency.
  • Taste and adjust. Once cooled slightly, you can add a pinch more salt for extra flavor.
  • Make a double batch. Youโ€™ll be amazed how quickly the best caramel disappears.

Instructions

  • Prepare Your Ingredients โ€“ Slice the butter and measure out the heavy whipping cream. Having everything ready is key since caramel moves quickly.

  • Melt the Sugar โ€“ Heat a pan over medium heat and add the sugar. Using a wooden spoon or heat-safe spatula, stir continuously. The sugar will clump upโ€”donโ€™t worry, thatโ€™s normal!
  • Watch It Turn Golden โ€“ Keep stirring as the sugar melts and transforms into a deep amber color (about 5-7 minutes).
  • Add Butter Carefully โ€“ Once melted, stir in the butter. The mixture will bubble up, so be cautious!
  • Incorporate the Heavy Cream โ€“ Turn off the heat but keep the pan on the stove. Slowly add the heavy whipping cream while stirring continuously.
