- Medjool pitted dates: this is how we will sweeten our bars.
- Almond flour: : I like the super fine almond flour from bobs mill.
- Granola butter: I used the birthday cake flavor but vanilla or any flavor works. If you donโt have any granola butter, you may substitute with almond butter.
- Vanilla extract: to give the treats a hint of vanilla flavor.
- White chocolate: to make our white chocolate ganache with. I used Lindt White Chocolate Bar.
- Heavy cream: to mix with our white chocolate to make the ganache. You can use heavy cream or heavy whipping cream.

how to make these Date Bars
- Fill a bowl with hot water and place 10 Medjool dates in to soften.
- Once they have soften, remove the pits from inside the dates.
- Place them in a food processor with 2 Tbsp of water and purรฉe.
- Scoop out the purรฉed dates and place into a large mixing bowl.
- Next, mix in the granola butter and the vanilla extract until combined.
- Add in the almond flour and mix.
- Line a loaf baking pan with parchment paper and scoop the dough onto the pan. Flatten evenly with the spatula.
- Place into the refrigerator while you make the white chocolate ganache.
- In a microwave safe bowl, place the white chocolate chips and the heavy cream and heat for 1 minute.
- Remove from the heat and stir until itโs combined. It will look like itโs ruined but keep mixing until itโs smooth.
- Remove the loaf pan from the refrigerator and top the dough with the white chocolate ganache. Top with sprinkles if youโd like.
- Place back into the refrigerator for 25 minutes.
- Cut into squares and enjoy.

- Soften the Dates: Place 10 Medjool dates in a bowl of hot water and let them soften for about 5 minutes. Once softened, remove the pits.
- Make the Date Paste: In a food processor, blend the pitted dates with 2 tablespoons of warm water until a smooth paste forms. Scrape down the sides as needed to ensure a uniform texture.
- Combine Ingredients: Transfer the date purรฉe to a large mixing bowl. Stir in granola butter (or almond butter) and vanilla extract until well combined.
- Form the Base: Add almond flour to the mixture and mix until it forms a cohesive dough.
- Prepare the Pan: Line a loaf pan with parchment paper. Press the dough evenly into the pan, flattening it with a spatula to create a smooth surface.
- Chill the Base: Place the pan in the refrigerator while preparing the ganache.
- Make the White Chocolate Ganache: In a microwave-safe bowl, combine white chocolate and heavy cream. Microwave for 1 minute, then stir continuously until smooth. If necessary, microwave for an additional 15-20 seconds to fully melt the chocolate.
