Prepare the Butter: Remove the butter from the fridge 1 hour before baking to allow it to reach room temperature.
Cream the Butter & Sugar: In a large mixing bowl or stand mixer with a paddle attachment, cream together the brown sugar and butter for 1-2 minutes until light and fluffy. Scrape down the sides of the bowl.
Incorporate the Wet Ingredients: Add the egg white and mix until fully combined. Then, mix in the molasses and all the spices until well incorporated.
Add Dry Ingredients: Sift in the flour, salt, and baking soda, mixing until a smooth dough forms.
Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 45 minutes. This helps the cookies maintain their shape while baking.
Preheat the Oven & Prep Baking Sheet: Set the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Roll & Cut: Lightly flour your work surface and roll out the dough to about ¼-inch thickness. If the dough sticks, gently lift and add more flour underneath.
Shape the Cookies: Use a gingerbread cookie cutter to cut out shapes, then carefully transfer them to the prepared baking sheet, spacing them at least 2 inches apart.
Bake: Bake for 10 minutes, then remove from the oven and let the cookies cool completely before decorating.
Let Them Set: After decorating, allow the icing to set for at least 30 minutes to harden slightly before serving.
