Ingredients

  • 1/2 cup 1 stick unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 cup 120g all-purpose flour
  • 1/4 cup 32g protein powder (unflavored, vanilla, or your favorite)
  • 1/2 cup chocolate chips plus extra for topping if desired

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth, light, and fluffy—about 2 to 3 minutes.
  • Mix in the egg yolk and vanilla extract until fully incorporated.
  • In a separate bowl, whisk together the flour, protein powder, and baking powder.
  • Gradually add the dry ingredients into the wet mixture, stirring until a soft cookie dough forms.
  • Gently fold in the chocolate chips until evenly distributed throughout the dough.
  • Using a tablespoon or cookie scoop, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10–12 minutes, or until the edges are golden and the centers look set but soft.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to finish cooling completely.

Tips to Perfect Your Protein Chocolate Chip Cookies

Making protein chocolate chip cookies that taste just like the original is all about balance. Here are a few tried-and-true tips to ensure success:
  • Use a high-quality protein powder – Whey-based powders tend to bake better and give a smoother texture than most plant-based options.
  • Don’t overmix – Especially once you add the flour and protein powder. Overmixing can lead to tough cookies.
  • Chill the dough – For thicker cookies that spread less, chill the dough for 15 to 30 minutes before baking.
  • Don’t skip the egg yolk – Using just the yolk gives the cookies a rich, chewy texture.
